Carrot Fries

Who says fries have to be starch-y? This bright, subtly sweet version is made from crunchy carrot sticks instead.

Ingredients

  • carrots (6, large)
  • olive oil (2 tablespoons)
  • sea salt (1/2 teaspoon)

Instructions

  1. Cut carrot into 2-inch long sections.

  2. Cut each section into thin sticks.

  3. In a large bowl, toss carrot sticks with olive oil and salt.

  4. Spread out carrot sticks on a parchment-lined baking sheet.

  5. Bake at 425° F for 18–22 minutes until carrots are browned.
